One of the items that we received last week was fresh pasta from Ohio City Pasta. As I mentioned in the garlic scape pesto post, this pasta is very good and not bitter like boxed whole wheat pasta tend to be. I found this recipe on their website and thought it sounded great and it was. Because there was no picture to go with the recipe, I did not know what to expect. Mine turned out to be more of a sauce than a chunky chop chop. Although the sauce was more below than on top of my pasta pictured below. And the flavor was great!

1/4 cup shallots (diced)
Virgin olive oil
1 1/2 cup tomatoes (diced)
4 Tbl. fresh basil leaves (chopped)
Salt and pepper
1 cup vegetable broth *or chicken broth which is what I used
2 tsp. garlic, minced
1.5 Tbl. butter
2 bundles of fresh Ohio City Pasta
Sautee shallots in oil until soft. Add tomatoes and cook for 4-5 minutes. Add Fresh basil leaves
and season with salt and pepper cook for 1 minute. Add 1 cup broth and simmer for 3-4 minutes. Add garlic and butter
and stir in. Toss with 2 bundles of fresh Ohio City Pasta Cooked in Boiling Water.
